Slow Cooker Minestrone Soup Recipe

So cozy and delicious, this vegetable-packed soup is perfect for the cold weather! We love that we can just throw everything in the slow cooker and come home to a warm meal at the end of the day. This is a recipe you'll want to try!

Ingredients
  

  • 2 cups carrots diced
  • 1.5 cups celery diced
  • 1 white onion diced
  • 1 14.5 oz can diced tomatoes
  • 1 15 oz can red kidney beans drained and rinsed
  • 1 15 oz can cannellii beans drained and rinsed
  • 1.5 cups zucchini diced
  • 1 15 oz can green beans drained
  • 3-4 cloves garlic minced
  • 4 cups vegetable stock
  • 2 cups water
  • 3 cups tomato juice
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 bay leaves
  • 1.5 cups ditalini pasta

Instructions
 

  • Place all ingredients (apart from the pasta) into your slow cooker and stir to mix vegetables and spices.
  • Cover and cook on low heat 6-8 hours or high 3-4 hours.
  • After cooking time is up, add in your pasta and cook on high heat for an additional 10-15 minutes until pasta is tender.
  • Serve and enjoy!
