Honey Lime Fruit Salad 🍯 This is the fruit sala Honey Lime Fruit Salad 🍯 This is the fruit salad recipe we can’t help but go back to over and over and over again. We’ve made just about every week for the past month and it’s perfect to have on hand for breakfast or an easy lunch side. Our toddler is obsessed with it and we can’t blame him! Recipe below👇🏼

Ingredients: 
• 2 cups fresh strawberries, chopped
• 2 cups fresh pineapple, chopped
• 2 cups fresh blueberries
• 2 cups red grapes, sliced into halves
• 2 cans mandarin oranges, drained
• 2 bananas, sliced
• 3 kiwis, peeled & sliced (optional)
• 1/4 cup honey 
• Zest from 1 medium lime
• Juice from 1/2 to 1 lime, to taste

Directions: 
1. Add all fruit to a large bowl and toss until fruit is evenly mixed. 
2. Add the honey, lime zest, and lime juice and toss until coated evenly. 
3. Serve and enjoy! 🤗

Mediterranean Turkey Bowls ☀️ With the perfect Mediterranean Turkey Bowls ☀️ With the perfect combination of crispy potatoes, flavorful ground turkey, pops of sweetness from the tomatoes, and freshness from the lettuce and cucumbers, this bowl is TRULY the perfect meal. High in protein, paired with healthy fat, and packed with veggies - you’re going to want to make these ASAP 🙌🏼 Recipe below!

Ingredients for ground turkey: 
• 1 lb ground turkey
• 2 tbsp red onion, diced
• 1 tbsp dried oregano
• 1 tbsp cloves garlic, minced
• 1/3 cup sun dried tomatoes, chopped
• 1/2 cup packed spinach, chopped 
• 1/4 cup feta cheese, crumbled 
• 1/4 tsp garlic powder
• 1/2 tsp salt
• 1/4 tsp black pepper

For the fries: 
• 2 russet potatoes, cut into fries
• 2 tbsp olive oil
• Generous sprinkle of salt & pepper

For the bowls: 
• 1 head romaine lettuce, chopped
• 1 cucumber, chopped 
• 1 pint cherry tomatoes, halved 
• 4-6oz feta cheese, crumbled 
• Hummus of choice, we love the roasted red pepper!

Directions: 
1. Start by making the fries so they can cook while you prepare the rest of the meal. Preheat oven to 425°F and line a baking sheet with parchment paper.
2. Toss the potatoes in the olive oil, salt, and pepper. Spread them on the baking sheet and roast for 35-40 minutes, tossing halfway through, until cooked and slightly crispy. 
3. Combine ground turkey, red onion, oregano, garlic, sun dried tomatoes, spinach, feta, garlic powder, and salt & pepper in a large bowl and mix until combined.
4. Add olive oil to large skillet, allow to warm over medium heat until hot, and then add in the ground turkey, stirring every few minutes until cooked through. 
5. While turkey is cooking, prepare the other bowl ingredients and set aside. 
6. Build your bowls by layering lettuce, fries, tomatoes, cucumbers, ground turkey, feta cheese, and a big dollop of hummus and ENJOY!

Easy Sheet Pan Chicken Parmesan & Broccoli 🥦 We Easy Sheet Pan Chicken Parmesan & Broccoli 🥦 We love this recipe when we need a quick and delicious dinner! It has the best flavor, the chicken is always super juicy, and is sure to be a favorite for the whole family! Recipe below and on our blog 👇🏼

Ingredients: 
• 1-2 eggs (depending on size)
• 1/2 cup panko bread crumbs
• 1/2 cup grated Parmesan cheese
• 1/2 tsp salt
• 1 tsp pepper
• 1 tsp garlic powder
• 4 chicken breasts, sliced into halves lengthwise 
• A few spritzes of cooking spray
• 4 cups broccoli florets
• 1 cup marinara sauce
• 1 cup shredded mozzarella cheese

Directions: 
1. Preheat oven to 400 degrees and lightly coat a baking pan with cooking spray.
2. In a shallow bowl (we like to use a pie dish), whisk your egg(s) and set aside. 
3. In a separate shallow bowl, stir together the bread crumbs, Parmesan cheese, salt, pepper, and garlic powder. 
4. Dip your chicken breast halves in egg and then in the bread crumb mixture, making sure there’s a layer covering the whole piece of chicken. 
5. Place chicken breasts on the baking pan, spritz with cooking spray, and bake in the oven for 10 minutes.
6. Remove chicken from the oven, spread your broccoli in a single layer around the chicken breasts, and return to the oven for another 10 minutes. 
7. Remove the pan and preheat the broiler. While the oven heats, spread marinara sauce over the chicken and top with shredded mozzarella cheese. 
8. Broil chicken and broccoli for about 3-5 minutes until cheese is golden brown and vegetables are tender. 
9. Serve over pasta or rice, or just plain, and enjoy! 🫶🏼

Ingredients: 
• 2 chicken breasts cut into cubes
• 1 tsp garlic powder
• 1 tsp paprika
• 1 tsp salt 
• 1 tsp pepper
• 1/4 cup cornstarch
• 1 tsp baking powder
• 1-2 tbsp oil (for the pan)
• Sesame seeds, for garnish
• Chopped green onions, for garnish

For the Orange Sauce:
• 2-3 garlic cloves, minced
• 1 tbsp ginger, minced
• 2/3 cup orange juice
• 5 tsp soy sauce
• 1 tbsp honey
• 1 tbsp cornstarch + 1/4 cup water, mixed
• Orange zest (optional)

Directions: 
1. Cut chicken into cubes and coat well with your garlic powder, paprika, salt, pepper, cornstarch, and baking soda. 
2. Add olive oil and chicken to a heated skillet over high heat and cook chicken for about 3-4 minutes on each side. Once cooked remove chicken from the pan and set aside to add back in later. 
3. Turn heat down to medium-low and add in your garlic & ginger, cooking until slightly fragrant. 
4. Add your orange juice (and zest if being used), soy sauce, and honey. Bring to a boil and allow to reduce a bit. 
5. Add your mixed cornstarch and water, stir and allow the sauce to thicken. Add your chicken back in and stir until fully coated.
6. Serve over rice with sesame seeds & green onions on top and enjoy!

Mushroom & Chickpea Stroganoff 🍄 We looooove th Mushroom & Chickpea Stroganoff 🍄 We looooove this vegetarian dish. It’s so creamy and comes together in under 30 minutes for a quick and nutritious dinner! Recipe below and on our website at tarragontable.com ✨

Ingredients:
• 1-2 tbsp olive oil
• 1 medium onion, finely diced
• 1 8oz package mushrooms, sliced
• 2-3 garlic cloves, minced 
• 1.5 tsp paprika
• 1/4 cup tomato paste
• 1 15.5 oz can chickpeas, rinsed & drained
• 1/2 cup heavy cream
• 1/4 cup water
• Juice from 1/2 lemon
• Salt & pepper, to taste
• Chopped fresh parsley, for garnish

Directions: 
1. In a large cast iron over medium heat, add 1-2 tbsp of olive oil and your onion. Cook until onion is softened slightly.
2. Add all of your sliced mushrooms and cook until they’re tender.
3. Add the garlic, paprika, tomato paste and stir until onions and mushrooms are coated.
4. Add in chickpeas, heavy cream and water. Stir to combine and bring to a simmer. Cook for about 5-8 minutes until chickpeas are fully heated through.
5. Add the lemon juice, salt & pepper to taste, garnish with fresh parsley and enjoy! We love ours over rice or with toasted pitas ☺️

Cottage cheese has gotten all kinds of hype lately Cottage cheese has gotten all kinds of hype lately and we’re here for it 🫶🏼 We love that this recipes gives us a super easy, versatile, protein packed ice cream alternative for those sweet treat cravings! Our toddler also LOVES this cottage cheese ice cream and it’s so nice to have a healthy option during the hot summer months! Recipe below 🥰

Ingredients: 
• 1 15oz container cottage cheese
• 1/4 cup honey
• About 1/2 cup desired add ins (raspberries, blackberries, Oreos, you name it!) + a few to add on top

Directions: 
1. Place the cottage cheese, honey, and desired toppings into a blender or food processor and blend until smooth. 
2. Transfer the mixture into one or multiple freezer-safe containers and sprinkle a few extra toppings on if desired.
3. Freeze for at least 2-3 hours in order to set. Allow to thaw slightly before scooping and enjoy!
