This Mexican Style Street Corn is simple & quick to throw together, and perfect for any party, Summer bbq or just as a delicious side to any weeknight dinner. Corn, queso fresco, and cilantro are a force to be reckoned with and this dish features all three. This is a great addition to a Summer bbq because, let’s be honest, sometimes you need to add a bit of flair to the typical hot dogs and hamburger type bbq. With the weather warming up, make sure to save this recipe for that first bbq of the season.

Nothing says Summer like corn! If you have it, we’d suggest using fresh corn off the cob. That will add another layer of flavor because you can’t beat fresh.

Mexican Style Street Corn

This Mexican Style Street Corn is simple & quick to throw together, and perfect for any party, summer bbq or just as a delicious side to any weeknight dinner. Recipe below!

Ingredients
  

  • 6 cups fresh or frozen corn
  • 1 tbsp olive oil
  • 1 tbsp mayonnaise
  • 2 tbsp plain greek yogurt
  • 2 tbsp lime juice
  • 1 tsp chili powder
  • 1/2 bunch cilantro chopped
  • 5 oz queso fresco crumbled
  • salt & pepper to taste

Instructions
 

  • Add the corn & olive oil to a pan and roasted in the pan until fully warmed through.
  • In a small bowl, stir together mayonnaise, greek yogurt, lime juice, and chili powder.
  • To a large bowl add your cooked corn and toss with the mayo lime sauce, chopped cilantro, and queso fresco.
  • Season with little salt & pepper if desired, garnish with more cilantro and queso fresco and enjoy!
