Mexican Style Street Corn

- 6 cups fresh or frozen corn
- 1 tbsp olive oil
- 1 tbsp mayonnaise
- 2 tbsp plain greek yogurt
- 2 tbsp lime juice
- 1 tsp chili powder
- 1/2 bunch cilantro chopped
- 5 oz queso fresco crumbled
- salt & pepper to taste
Add the corn & olive oil to a pan and roasted in the pan until fully warmed through.
In a small bowl, stir together mayonnaise, greek yogurt, lime juice, and chili powder.
To a large bowl add your cooked corn and toss with the mayo lime sauce, chopped cilantro, and queso fresco.
Season with little salt & pepper if desired, garnish with more cilantro and queso fresco and enjoy!
