These bowls are so fresh and delicious. With an amazing marinade, the chicken is so flavorful and paired with tzatziki, orzo, and fresh veggies this is a perfect recipe for dinners this summer!

Ingredients
  

Bowl Ingredients:

  • 1 cup orzo cooked as directed
  • 2 chicken breasts cut into strips
  • 1 cucumber chopped
  • 2 tomatoes chopped
  • 2 tbsp fresh parsley chopped
  • 1/3 cup crumbled feta cheese
  • 1/4 cup tzatziki
  • 1 lemon cut into slices for garnish

For the Marinade:

  • 2 tbsp plain greek yogurt
  • Juice from 1 lemon
  • 1/4 cup olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • 1/2 tsp salt & pepper blend

Instructions
 

  • Start by adding all marinade ingredients to a bowl and whisk together. Add cut chicken to the marinade, mix until coated and allow to marinate in the fridge for 1-2 hours.
  • Cook the orzo as directed, chop your cucumbers and tomatoes, and set aside.
  • In a cast iron pan, cook the chicken and remove from the pan once fully cooked through.
  • Assemble by adding orzo, cucumber, tomato, chicken, feta cheese, tzatziki, fresh parsley, and a lemon wedge to a large bowl and enjoy!
