Being from Utah we are BIG Cafe Rio fans. Their queso dip with tortilla chips is one of our favorite sides to get there and we’ve finally found the way to recreate it. This Cafe Rio Style Queso is packed with flavor. So creamy and delicious it’s made with tomatoes, jalapeños, onions, cilantro, garlic, and of course, CHEESE. It’s easy to make and should only take you about 10 minutes to whip up. Perfect for parties or for taco night at home! This dish is bound to be a hit.

YOU GUYS, this Cafe Rio Style Queso dip is SO good. Smooth, creamy, so flavorful and super easy to make!

Ingredients
  

  • 1/2 Yellow Onion
  • 1 Roma Tomato
  • 1 Lime juiced
  • 1 Jalapeño seeds removed
  • 1/2 Bunch Cilantro about 1/2 to 3/4 cup
  • 10 oz Canned Tomatoes with Green Chiles
  • 1 clove Garlic
  • 1/4 tsp Salt to taste
  • 8 oz American Cheese we used velveeta
  • 4 oz Cream Cheese
  • 1/4 tsp Chili Powder
  • 1/4 tsp Cumin

Instructions
 

  • In a food processor or blender, combine onion, roma tomato, jalapeño, garlic, canned tomatoes with green chilies, cilantro, lime juice and salt.
  • Blend until small chunks remain in the mixture and then add additional salt to taste if needed.
  • Cut American cheese and cream cheese into cubes and microwave in a bowl for 2 minutes, stirring every 30 seconds, until smooth.
  • Combine 3/4 to 1 cup (to taste) of blended mixture to melted cheese and stir. Add & stir in chili powder and cumin.
  • Serve with tortilla chips and enjoy!
