Easy Sheet Pan Chicken Parmesan & Broccoli Recipe
Ingredients
- 1-2 eggs depending on size
- 1/2 cup panko bread crumbs
- 1/2 cup grated Parmesan cheese
- 1/2 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 4 chicken breasts sliced into halves lengthwise
- A few spritzes of cooking spray
- 4 cups broccoli florets
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
Instructions
- Preheat oven to 400 degrees and lightly coat a baking pan with cooking spray.
- In a shallow bowl (we like to use a pie dish), whisk your egg(s) and set aside.
- In a separate shallow bowl, stir together the bread crumbs, Parmesan cheese, salt, pepper, and garlic powder.
- Dip your chicken breast halves in egg and then in the bread crumb mixture, making sure there’s a layer covering the whole piece of chicken.
- Place chicken breasts on the baking pan, spritz with cooking spray, and bake in the oven for 10 minutes.
- Remove chicken from the oven, spread your broccoli in a single layer around the chicken breasts, and return to the oven for another 10 minutes.
- Remove the pan and preheat the broiler. While the oven heats, spread marinara sauce over the chicken and top with shredded mozzarella cheese.
- Broil chicken and broccoli for about 3-5 minutes until cheese is golden brown and vegetables are tender.
- Serve over pasta or rice, or just plain, and enjoy!
