Total Time 45 minutes mins
- 1-2 eggs depending on size
- 1/2 cup panko bread crumbs
- 1/2 cup grated Parmesan cheese
- 1/2 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 4 chicken breasts sliced into halves lengthwise
- A few spritzes of cooking spray
- 4 cups broccoli florets
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
Preheat oven to 400 degrees and lightly coat a baking pan with cooking spray.
In a shallow bowl (we like to use a pie dish), whisk your egg(s) and set aside.
In a separate shallow bowl, stir together the bread crumbs, Parmesan cheese, salt, pepper, and garlic powder.
Dip your chicken breast halves in egg and then in the bread crumb mixture, making sure there’s a layer covering the whole piece of chicken.
Place chicken breasts on the baking pan, spritz with cooking spray, and bake in the oven for 10 minutes.
Remove chicken from the oven, spread your broccoli in a single layer around the chicken breasts, and return to the oven for another 10 minutes.
Remove the pan and preheat the broiler. While the oven heats, spread marinara sauce over the chicken and top with shredded mozzarella cheese.
Broil chicken and broccoli for about 3-5 minutes until cheese is golden brown and vegetables are tender.
Serve over pasta or rice, or just plain, and enjoy!
