Greek Chicken Orzo Bowl Recipe
Ingredients
Bowl Ingredients:
- 1 cup orzo cooked as directed
- 2 chicken breasts cut into strips
- 1 cucumber chopped
- 2 tomatoes chopped
- 2 tbsp fresh parsley chopped
- 1/3 cup crumbled feta cheese
- 1/4 cup tzatziki
- 1 lemon cut into slices for garnish
For the Marinade:
- 2 tbsp plain greek yogurt
- Juice from 1 lemon
- 1/4 cup olive oil
- 1 tbsp red wine vinegar
- 1 tsp dried oregano
- 1 tsp dried parsley
- 1/2 tsp salt & pepper blend
Instructions
- Start by adding all marinade ingredients to a bowl and whisk together. Add cut chicken to the marinade, mix until coated and allow to marinate in the fridge for 1-2 hours.
- Cook the orzo as directed, chop your cucumbers and tomatoes, and set aside.
- In a cast iron pan, cook the chicken and remove from the pan once fully cooked through.
- Assemble by adding orzo, cucumber, tomato, chicken, feta cheese, tzatziki, fresh parsley, and a lemon wedge to a large bowl and enjoy!
