We love a good slow cooker recipe because it simplifies dinner prep SO much. With a baby that has just learned to run and climb, making dinner can often be a challenge which is why we turn to the crockpot so often! These tacos are delicious, simple to make, and packed with protein. If you need an easy dinner idea this week, look no further. We love to use our Fresh Garden Salsa in this recipe (plus a little to top the burritos, of course) and topping them with some of our Fresh Guacamole, makes for a dish you truly won’t be able to resist coming back to over and over again!
Slow Cooker Chicken Burrito Recipe
This is one of the yummiest, easiest recipes that always seems to make into our dinner rotation. Make dinner prep a breeze with this delicious, simple meal.
Ingredients
- 2 chicken breasts
- 2 cups of our fresh garden salsa or your salsa of choice!
- 1 15 oz can black beans drained and rinsed
- 1 4 oz can diced green chili peppers
- 1 tsp garlic powder
- 6-8 flour tortillas
- About 2 cups shredded cheese to melt on tortillas
- Guacamole for garnish
- Plain greek yogurt for garnish
Instructions
- Place chicken breasts, salsa, black beans, green chilies, and garlic powder in a slow cooker and cook on high for 3-4 hours or low for 6-7 hours.
- Once the chicken is cooked through and shreds easily with a fork, shred pieces fully and mix well.
- In a pan, heat the tortillas, add some shredded cheese and heat until cheese is slightly melted.
- Top with about 3/4 cups of shredded chicken, guacamole, and greek yogurt.
- Fold & roll your burrito and enjoy!
