Buffalo Chicken Tostada Recipe
These tostadas are a favorite of ours. They have a ton of protein, amazing flavor and are incredibly easy to throw together. Save this recipe for a quick and delicious dinner!
Ingredients
- 2 cooked chicken breasts shredded
- 8 corn tortillas
- 3 tbsp Frank’s Buffalo sauce
- 1 can sweet corn
- 2-3 roma tomatoes diced
- 1/4 cup feta cheese crumbled
- 1/2 cup sliced green onions
- 2 tbsp plain greek yogurt + about 1 tbsp water to drizzle
Instructions
- Preheat the oven to 350 degrees, and place tortillas on a baking sheet lined with parchment paper.
- Cook and shred the chicken, add the Buffalo sauce and toss until the chicken is coated.
- Divide the buffalo chicken, corn, tomatoes, feta cheese, and green onions between the 8 tortillas.
- Bake for 10-12 minutes until all ingredients are heated through and then remove from the oven.
- While tostadas are cooking, combine greek yogurt with water and whisk until smooth and a good consistency for drizzling on tostadas. Add more water if needed.
- Top each tostada with some plain Greek yogurt drizzle and enjoy!
