With a maiden name like Naughton, you know we’ve got to be some serious Irish heritage going on so we’re big fans of St. Patrick’s Day! This is a super simple and fun recipe for the holiday that’s hearty, flavorful, and delicious. We also love that it’s a recipe that can be thrown into the slow cooker and left to do it’s thing. Who doesn’t love taking 30 minutes in the morning and coming home to a dinner that’s ready to go? If you’re looking for a St. Patty’s Day dinner, look no further!
Slow Cooker Corned Beef & Cabbage Recipe
This is a simple and fun slow cooker meal for St. Patrick’s Day that you won't want to miss out on! Corned Beef & Cabbage is a traditional Irish meal and we loved making it to celebrate the holiday!
Equipment
- 1 Slow Cooker
Ingredients
- 2-3 lbs. Corned beef brisket with seasoning packet included
- 1/2 large white onion sliced
- 5 cups gold yukon potatoes quartered
- 3-4 carrots sliced thick
- 2 garlic cloves peeled & sliced
- 1/2 head cabbage cut into wedges
- 1.5 cups water
- Chopped fresh parsley for garnish if desired
Instructions
- To your slow cooker add sliced onions.
- Rinse your corned beef and pat dry before adding on top of your onions.
- Sprinkle the included corned beef seasoning packet over the beef and add the potatoes, carrots, and garlic on top.
- If you want your cabbage very tender you can add it to the slow cooker now or wait until 2 hours before serving if you’d like it more al dente.
- Pour water over all ingredients and add the slow cooker lid.
- Cook on high for 5 hours or low for 8 hours.
- Remove the meat onto a cutting board and slice into strips.
- Add corned beef back into the slow cooker, serve and enjoy a hearty meal for the whole family!
