Slow Cooker Corned Beef & Cabbage Recipe
This is a simple and fun slow cooker meal for St. Patrick’s Day that you won't want to miss out on! Corned Beef & Cabbage is a traditional Irish meal and we loved making it to celebrate the holiday!

- 2-3 lbs. Corned beef brisket with seasoning packet included
- 1/2 large white onion sliced
- 5 cups gold yukon potatoes quartered
- 3-4 carrots sliced thick
- 2 garlic cloves peeled & sliced
- 1/2 head cabbage cut into wedges
- 1.5 cups water
- Chopped fresh parsley for garnish if desired
To your slow cooker add sliced onions.
Rinse your corned beef and pat dry before adding on top of your onions.
Sprinkle the included corned beef seasoning packet over the beef and add the potatoes, carrots, and garlic on top.
If you want your cabbage very tender you can add it to the slow cooker now or wait until 2 hours before serving if you’d like it more al dente.
Pour water over all ingredients and add the slow cooker lid.
Cook on high for 5 hours or low for 8 hours.
Remove the meat onto a cutting board and slice into strips.
Add corned beef back into the slow cooker, serve and enjoy a hearty meal for the whole family!
