Mediterranean Protein Pasta Salad Recipe

Pasta Salad Ingredients:
- 1 14.5 oz box protein pasta, cooked as directed we love the Barilla Protein Penne
- 1 cup green bell pepper chopped
- 1 pint cherry tomatoes diced or quartered
- 1 cup cucumber diced
- 1/2 a red onion diced
- 1 cup feta cheese crumbled
- 1/2 cup fresh basil chopped
- 1/2 cup fresh parsley chopped
- 1.5 cups chickpeas (about 2 cans) drained and rinsed
Dressing Ingredients:
- 2 tbsp red wine vinegar
- Juice from 1/2 lemon
- 1/4 tsp dried oregano
- 1/2 tsp nutritional yeast
- 1 tbsp dijon mustard
- 2 tbsp olive oil
- Salt & pepper to taste (about 1/4 tsp each)
Add the pasta salad ingredients to a large bowl and toss.
Add all dressing ingredients to a jar & give it a good shake until fully combined.
Pour dressing over the pasta salad, mix together and serve!
