Chicken Quinoa Power Bowl Recipe
We love a healthy dinner that’s packed with veggies & protein and this recipe fits the bill. It’s SO delicious and is perfect for an easy weeknight meal. It’s also great if you want to meal prep in larger quantities to have as leftovers and lunches throughout the week!

- 1.5 cups quinoa cooked as directed
- 1 yellow bell pepper chopped into strips
- 1 can of corn drained
- 2 chicken breasts chopped into strips & cooked
- 1 jalapeño chopped into sliced
- 1/2 bunch cilantro chopped
- 2 limes chopped into wedges
- 1 head of romaine chopped
- 2 avocados sliced
- 1 cup queso fresco crumbled
- Fresh salsa to garnish
- Bolthouse Cilantro Avocado Dressing
Cut chicken into 1/2 inch thick strips or chunks and cook with olive oil and some salt & pepper until crisp on both sides and cooked through.
While chicken is cooking, roast the yellow bell pepper and corn in a pan until they have a slight char and cook your quinoa as directed.
Once all ingredients are prepared, assemble your bowls by adding a laying of quinoa in the bottom of the bowl, and all other ingredients on top!
Dress with a little cilantro avocado dressing and enjoy!
