Mediterranean Turkey Bowl Recipe

With the perfect combination of crispy potatoes, flavorful ground turkey, pops of sweetness from the tomatoes, and freshness from the lettuce and cucumbers, this bowl is TRULY the perfect meal. Ingredients
  

For the ground turkey:

  • 1 lb ground turkey
  • 2 tbsp red onion diced
  • 1 tbsp dried oregano
  • 1 tbsp cloves garlic minced
  • 1/3 cup sun dried tomatoes chopped
  • 1/2 cup packed spinach chopped
  • 1/4 cup feta cheese crumbled
  • 1/4 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the fries:

  • 2 russet potatoes cut into fries
  • 2 tbsp olive oil
  • Generous sprinkle of salt & pepper

For the bowls:

  • 1 head romaine lettuce chopped
  • 1 cucumber chopped
  • 1 pint cherry tomatoes halved
  • 4-6 oz feta cheese crumbled
  • Hummus of choice we love the roasted red pepper!

Instructions
 

  • Start by making the fries so they can cook while you prepare the rest of the meal. Preheat oven to 425°F and line a baking sheet with parchment paper.
  • Toss the potatoes in the olive oil, salt, and pepper. Spread them on the baking sheet and roast for 35-40 minutes, tossing halfway through, until cooked and slightly crispy.
  • Combine ground turkey, red onion, oregano, garlic, sun dried tomatoes, spinach, feta, garlic powder, and salt & pepper in a large bowl and mix until combined.
  • Add olive oil to large skillet, allow to warm over medium heat until hot, and then add in the ground turkey, stirring every few minutes until cooked through.
  • While turkey is cooking, prepare the other bowl ingredients and set aside.
  • Build your bowls by layering lettuce, fries, tomatoes, cucumbers, ground turkey, feta cheese, and a big dollop of hummus and ENJOY!
