This Feta Pasta went viral a few years ago and it still SLAPS. We’ve added a few delicious twists to the recipe and (in our humble opinion) it might be even better than before! In addition to the tomatoes & feta, this recipe has bell peppers, zucchini, chopped basil and more crumbled feta on top which creates the most amazing balance of flavors. This is a dish that’s sure to please the whole family and is a crowd favorite. The perfect way to introduce more vegetables into your meal in a delicious and super simple way!
Bell Pepper & Zucchini Feta Pasta
This Viral Feta Pasta still SLAPS and with the delicious bell peppers & zucchini we've added to the recipe it's even better than before! This recipe is a crowd pleaser that you'll want to try.
Ingredients
- 1 pint cherry tomatoes
- 2 bell peppers one red & one yellow
- 1 zucchini chopped
- 1-2 tbsp olive oil
- About 1 tsp mixed salt & pepper
- 1 tsp Italian seasoning
- 1/2 tsp minced garlic
- 8 oz block of feta save 2-3 tbsp for garnish if desired
- About 1/2 box of rigatoni
- 1/4 cup chopped fresh basil for garnish
Instructions
- Preheat oven to 400 degrees and add tomatoes, bell peppers, and zucchini to a baking dish.
- Drizzle vegetables with olive oil and sprinkle with salt & pepper and add block of feta directly in the middle of the vegetables.
- Add another drizzle of olive oil, the Italian seasoning, and minced garlic on top of the feta block.
- Bake for 30-40 minutes until vegetables are fully cooked and sizzling.
- While vegetables & feta are in the oven, cook your pasta until al dente.
- When vegetables are cooked, remove from the oven and immediately press down on the feta and mix everything together. Add pasta and stir until fully combined into the creamy feta.
- Top with fresh basil, more crumbled feta, serve and ENJOY!
