Winter Nourish Bowl with Dijon Citrus Dressing

This salad is SO delicious and packed with goodness. It’s a perfect quick and healthy lunch with the most amazing citrus dressing. Enjoy the recipe for this fresh, bright salad!

Ingredients
  

For the salad:

  • A few handfuls of romaine lettuce
  • 1/2 cup roasted beets
  • 1/2 cup roasted butternut squash
  • 1/4 cup craisins
  • 1/4 cup walnuts
  • 2 tbsp pumpkin seeds
  • 1/4 cup shaved fresh parmesan cheese

For the dressing:

  • 1 tbsp dijon mustard
  • 1 tbsp honey
  • Juice from half a lemon

Instructions
 

  • Make your dressing by stirring dijon mustard, honey and lemon juice together in a small bowl and set aside.
  • Add romaine lettuce to a bowl with all ingredients on top! Feel free to add other salad topping favorites as well.
  • Pour dressing over salad, toss and enjoy!
