Winter Nourish Bowl with Dijon Citrus Dressing
This salad is SO delicious and packed with goodness. It’s a perfect quick and healthy lunch with the most amazing citrus dressing. Enjoy the recipe for this fresh, bright salad!
Ingredients
For the salad:
- A few handfuls of romaine lettuce
- 1/2 cup roasted beets
- 1/2 cup roasted butternut squash
- 1/4 cup craisins
- 1/4 cup walnuts
- 2 tbsp pumpkin seeds
- 1/4 cup shaved fresh parmesan cheese
For the dressing:
- 1 tbsp dijon mustard
- 1 tbsp honey
- Juice from half a lemon
Instructions
- Make your dressing by stirring dijon mustard, honey and lemon juice together in a small bowl and set aside.
- Add romaine lettuce to a bowl with all ingredients on top! Feel free to add other salad topping favorites as well.
- Pour dressing over salad, toss and enjoy!
