Ingredients
  

For the base:

  • 6-7 medium yukon gold potatoes thinly spiced
  • 1/2 white onion cut into slices
  • 1/2 cup gruyere cheese for topping
  • 1/4 cup grated parmesan for topping
  • 1-2 tbsp fresh parsley for garnish

For the sauce:

  • 2 tbsp butter
  • 1/4 cup flour
  • 1.5 cups milk
  • 8 oz sharp cheddar cheese about 2 cups
  • 1/2 tsp garlic powder
  • 3/4 tsp salt
  • freshly ground black pepper to taste

Instructions
 

  • Preheat the oven to 375 degrees & grease a square baking dish with a little butter.
  • Place sliced potatoes in three tight slanted rows and add in onion slices between the rows wherever you can fit them.
  • Next make your sauce: add butter to a pan on medium heat until butter is melted. Then whisk in the flour and slowly add in milk, whisking constantly to prevent lumps until it’s a similar consistency to creamy gravy.
  • Turn heat to low and stir in shredded cheddar cheese, garlic powder, salt and pepper. Stir together until smooth.
  • Pour cheese sauce over potatoes, cover with foil & bake for 45 minutes.
  • Remove foil, add gruyere & parmesan and bake again uncovered for another 30-45 minutes until potatoes are done and your cheese is golden brown on top.
  • Garnish with fresh chopped parsley and enjoy!
