We first made these Delicious Pomegranate Sea Salt Chocolates during the holidays and absolutely fell in love with them. They are SO quick and easy to make and pack a mouthful of flavor. The chocolate is smooth and creamy, the pomegranate seeds sweet and a little tart, and the sea salt adds the perfect amount of savory balance. This is a fantastic treat if you’re looking for something that you can keep on hand in the fridge for snacking or bring to a party as mouthwatering crowd pleaser.
Pomegranate seeds can be a pain to remove so here is the technique we’ve found to make it so much easier (video below):
Instructions:
1. Make a circular cut around the top of the pomegranate, about 1-2 inches below the stem and then cut to widen the circle slightly as needed.
2. Make about 6 vertical cuts from top to bottom to split the pomegranate into sections.
3. Push your thumb into the middle to help break open the sections and remove the fleshy core piece.
4. Turn the pomegranate over in your hands & tap the skin with a wooden spoon, rotating as you go, to remove the seeds into a bowl.
5. Remove any large pieces of membrane & rinse with water in a bowl if needed.
6. Enjoy in salads, as a garnish for roasted vegetables, or in treats!
Pomegranate Sea Salt Chocolates
Ingredients
- 1 cup chocolate chips
- 1 tbsp coconut oil
- 1 Pomegranate
Instructions
- In a bowl, microwave 1 cup of chocolate (dark, semi-sweet or milk will all work – we used milk this time) with a 1 tbsp of coconut oil for about 1-2 minutes, stirring every 30 seconds until fully melted.
- Pop in the freezer for at least 45 minutes and enjoy!
