Balsamic & Honey Glazed Carrot Recipe

Ingredients
- 7-8 carrots chopped into wedges or circles
- 1-2 tbsp olive oil
- Salt & pepper about 1/4 tsp of each but season with your heart!
- 1 tbsp butter
- 1/4 cup balsamic vinegar
- 2 tbsp honey
- Flaky sea salt for garnish
Instructions
- Preheat the oven to 400 degrees, line a baking sheet with parchment paper, and arrange your carrots on the prepared sheet.
- Drizzle the carrots with olive oil and sprinkle with your salt & pepper. Toss lightly to coat.
- Pop the carrots into the oven and roast them for 30 minutes until slightly tender.
- While the carrots are roasting, prepare your glaze by adding your butter, balsamic vinegar, and honey to a small sauce pot and summers for about 10 minutes on medium-low heat, or until it has reduced and thickened slightly.
- When the carrots are done roasting, drizzle glaze over them and sprinkle with a garnish of flaky sea salt.
- Serve warm and enjoy!
